I'm honestly looking to get my hands on the 2nd ed. PFRPG and look at converting some of the races and creatures to D&D 3.0 standards. Thoughts or advice are welcome!

Sorry, the only Pally-AD&D conversions I did were HU to AD&D 2nd Ed (pre-WoTC/D20).

An issue you are going to run into is the varying attribute codes.
only humans are 3d6 for all attributes. (some stats can go as high as 6d6 with a multiplier or bonus over top of that).
